We were excited to see your question, since it gives us the opportunity to mention one of our favorite sites, the silly but informative Sweetbreads.com. Head over to the site, click on Butcher Shop, and get ready to learn and laugh as Toby takes you on a virtual tour of the cow. we decided to double-check our work. We headed to Google and searched on "beef cuts." The first few sites weren't helpful, but then we clicked on Beef Cuts - Where They Come From, a great page for web surfers who've yet to download Shockwave. Finally, through another Google search, we located Agripedia's Beef page, which offers a photograph of each cut, a diagram of its location on the side of beef, and an interesting tidbit of meat trivia. Delicious.
