How do you season a cast-iron frying pan?

Dear Robert:
Just for the heck of it, we did a Yahoo! search on "iron skillet" (using quotation marks around the term). Our expectations were pretty low -- we didn't think we'd find a skillet category in Yahoo!'s directory. Still, we thought we might find some clues to inform our search.

Unfortunately, our search led us to nothing but Iron Skillet magazine, a publication that offers "better living through useless, inaccurate information."

Undaunted, we clicked on the Go To Web Page Matches link at the bottom of the search results page and scrolled down until we spied a promising link: Care For Your Cast-Iron Skillet. The site offers a simple procedure for seasoning your cast-iron frying pan:

  • rinse skillet with warm soapy water
  • dry skillet well
  • rub with a generous amount of oil
  • leave on a burner over low heat for at least an hour, or you can bake it in the oven at 350 degrees for two hours
  • let it cool
  • pour out any leftover oil
  • repeat this process several times before using the skillet
This seemed reasonable enough, but we always double-check our work. We headed over to Google and searched on "iron skillet seasoning." The first site turned out to be Texas Cooking Online and featured an in-depth article titled "How to Love Your Cast-Iron Skillet."

With the help of these two sites and a little elbow grease, you should be enjoying all kinds of fried treats in no time.
