How can I make candy canes?

Dear Kristy:
Ahh, a fellow candy lover. We gladly accepted the challenge posed by your question and set out in search of candy cane recipes.

At our first stop, the ever-helpful and tempting Epicurious.com, we came across a thread on Gail's Recipe Swap about making candy canes. Although the ingredients are pretty simple (sugar, water, corn syrup, salt, cream of tartar, flavoring oil, and food coloring), the process itself sounds a bit more tricky and involved. At one point, you need at least two people to "stretch and twist the ball in opposite directions to form a long rope with the traditional stripe."

We noticed another post from the same person, who returned to offer additional advice. Besides including cooking temperatures (missing from the previous post) and other helpful hints, the new message recommends using six people instead of two. Sounds like things didn't go as smoothly as planned.

We also found a recipe for Santa's Victorian Candy Canes. We're not sure what makes a candy cane Victorian, but it sounded fairly similar to the first recipe.

We found yet another recipe that differed slightly in ingredients, calling for the addition of vinegar and powdered sugar.

Personally, we'd rather buy them than sweat it out in the kitchen, but if you have the time, energy, patience, and a supply of willing friends or family members, try it out at home. Just remember to send us the best of the batch.
