The Web abounds with illustrated step-by-step instructions on turkey carving. After careful research, we've managed to boil down the process to four simple steps:

1. Remove the drumsticks and thighs with a delicate combination of arm torque and knife incision. As the fine folks at Edgecraft Knives tell us, a sharp knife is crucial to this process.

2. Separate the drumsticks from the thighs by cutting through the connecting joint. Shady Brook Farms offers the best illustration of this particular step. Carve these pieces by keeping parallel to the bone.

3. Remove the wings the same way. Notice on Epicurious how this leaves you with the unadorned torso of the gobbler.

4. Carve the breast meat with slanting slices, parallel to the rib cage. Do one side first, and then the other. If you start getting nervous, ask everyone to take five minutes while you watch the Quicktime demonstration at Hannaford foods.
